HERE YOU'LL FIND HEAPS OF GREAT RECIPES THAT HAVE HELPED ME LOOSE A LOT OF WEIGHT.

I love dry curries so I designed my own curry 'powder' & you can contact me if you would like that recipe. It is fragrant, flavoursome spicey but not too hot although adding more would certainly make the meal much hotter. I also use it when making Biryani or dry lamb curry.

       
Clissa's Own Curry
Powder                      Clissa's Own Diet Vegetable Curry

'Clissa's Own Diet' Vegetable Curry

1 onion chopped into 2cm dice
1 medium carrot diced into 1cm dice
A piece of sweet potato big enough to get a small handful of 1cm diced pieces

1/3 medium sized yellow zucchini cut into 2cm dice
1/2 or 2/3 large Continental or Lebanese cucumber chopped into 2cm cubes. Don't bother to skin it
¼ red capsicum cut into 2cm squares
10-12 small green beans cut in half

Onion or garlic chives cut into 4cm lengths
1 teaspoons garlic oil from my diet plan per serve of curry
1 teaspoon of your favorite curry mix per 2 serves
2/3 cup coconut cream (lite)
S&P
Papadams
Sour cream to top the curry

Have all the vegetables cut up on a board ready as the cooking part takes only a few minutes.

Use a wok or non-stick fry pan & get it quite hot. Fry off curry powder a few seconds, add onion, carrot & sweet potato & toss quickly to fry 2 min with lid on.

Then S&P & soft all veggies & fry 1 min only with lid on pan to just heat veggies through
While sizzling well add coconut cream & toss lightly & remove from heat.
Ready to serve! Add some plain yoghurt or sour cream if it's a bit chilli hot.

Serve with papadams done in microwave.

You can include other veggies like mushrooms cut into 2cm pieces or you can just use 1 vegetable such as cucumber alone.

Use more curry & coconut cream if using more veggies for more serves
